A giant package brimming with likeability and creativity. This would be an accurate description of Silvio Bessone. This moustachioed confectioner with his powerful presence oozes a blend of passion, enthusiasm, and expertise that he pours into his work every day: making chocolate.
Bessone is not happy being a simple chocolate chef. In his well-equipped workshop in Vicoforte, near Mondovi (CN), there are shipments of the best cru and cocoa that he personally selects in South America. The entire process of making chocolate is carried out in the workshop to obtain the raw material for creating a variety of chocolates and pralines.
The specialities of this master chef from Cuneo include: the King’s salami, classic Gianduiotti with I.G.P. hazelnuts from Piedmont, the Sapori del Piemonte with cocoa and fruit, the Moor’s Cigars – cigar-shaped chocolates made of Caribbean cocoa and hazelnuts, the Sorrisi del Santuario, and Fuego, made with chocolate aromatized with energizing herbs.
You must try the Salame del Re (the King’s Salami), a special salame with almonds and toasted hazelnuts, defined as “the best” by experts at Harrod’s.
